  • 2 tablespoons vanilla pudding mix (or custard powder)
  • 3 tablespoons heavy cream
  • 1 1/22 cups powdered sugar

Chocolate Topping:

  • 4 oz semi-sweet chocolate (or dark chocolate)
  • 2 teaspoons vegetable oil

1. Prepare the Pan

  • Line an 8×8 or 9×9 inch pan with parchment paper, leaving some paper overhanging for easy removal later.

2. Make the Base Layer

  1. In a glass bowl over simmering water (or using a microwave), melt together the butter, cocoa, and sugar.
  2. Once melted, whisk in the egg until the mixture is smooth and glossy.
  3. Stir in the graham cracker crumbs, shredded coconut, and chopped nuts until well combined.
  4. Press the mixture firmly into the bottom of the prepared pan.
  5. Freeze the base layer for about 20 minutes to set.

3. Prepare the Middle Layer

  1. Beat the softened butter until light and fluffy.
  2. Mix in the vanilla pudding mix and heavy cream until smooth.
  3. Gradually add the powdered sugar, beating until the mixture is thick and creamy.
  4. Spread this layer evenly over the chilled base layer.
  5. Refrigerate for 15 minutes to set.

4. Make the Chocolate Topping

  1. Melt the semi-sweet chocolate in a microwave (at medium power) or over simmering water, stirring until smooth.
  2. Mix in the vegetable oil until well combined.
  3. Pour and spread the chocolate evenly over the middle layer.

5. Chill and Cut

  1. Refrigerate the bars until the chocolate topping is set, about 20 minutes.
