- 3 tablespoons heavy cream
- 1 1/2 – 2 cups powdered sugar
Chocolate Topping:
- 4 oz semi-sweet chocolate (or dark chocolate)
- 2 teaspoons vegetable oil

1. Prepare the Pan
- Line an 8×8 or 9×9 inch pan with parchment paper, leaving some paper overhanging for easy removal later.
2. Make the Base Layer
- In a glass bowl over simmering water (or using a microwave), melt together the butter, cocoa, and sugar.
- Once melted, whisk in the egg until the mixture is smooth and glossy.
- Stir in the graham cracker crumbs, shredded coconut, and chopped nuts until well combined.
- Press the mixture firmly into the bottom of the prepared pan.
- Freeze the base layer for about 20 minutes to set.
3. Prepare the Middle Layer
- Beat the softened butter until light and fluffy.
- Mix in the vanilla pudding mix and heavy cream until smooth.
- Gradually add the powdered sugar, beating until the mixture is thick and creamy.
- Spread this layer evenly over the chilled base layer.
- Refrigerate for 15 minutes to set.
4. Make the Chocolate Topping
- Melt the semi-sweet chocolate in a microwave (at medium power) or over simmering water, stirring until smooth.
- Mix in the vegetable oil until well combined.
- Pour and spread the chocolate evenly over the middle layer.
5. Chill and Cut
- Refrigerate the bars until the chocolate topping is set, about 20 minutes.
- Before the chocolate hardens completely, score it with a knife to make cutting easier later.
- Once set, let the bars sit at room temperature for about 10 minutes.
