Ingredients

Olive oil also adds a touch of healthy fat and a subtle richness to the final snack. You can use extra virgin olive oil for its robust flavor or a lighter olive oil for a milder taste.

Making crunchy roasted chickpeas is surprisingly simple, but following these steps carefully will ensure you achieve that perfect crispy texture every time.

  1. Preheat Your Oven and Prepare a Baking Sheet: Begin by preheating your oven to 400°F (200°C). This high temperature is key to achieving that desirable crunch. While the oven is heating, prepare a large baking sheet. You can line it with parchment paper for easier cleanup, although it’s not strictly necessary. Just ensure the baking sheet is clean and dry.
  2. Rinse and Drain the Chickpeas Thoroughly: Open your cans of chickpeas and pour them into a colander or fine-mesh sieve. Rinse them thoroughly under cold running water for about a minute. This step is important for removing any excess sodium and the starchy liquid from the can, which can hinder crispiness. Rinsing also helps to make the chickpeas more digestible for some people.
  3. Dry the Chickpeas Meticulously – This is Crucial! This is arguably the most important step for achieving truly crunchy roasted chickpeas. Excess moisture is the enemy of crispiness. After rinsing, shake the colander well to remove as much water as possible. Then, transfer the chickpeas to a clean kitchen towel or several layers of paper towels. Gently pat them dry, and then roll them around in the towel to absorb even more moisture. You want to get them as dry as you possibly can. Consider even letting them air dry for about 10-15 minutes after towel-drying for extra insurance. The drier they are, the crispier they will become in the oven.
